Steven Dolby was born in Rotherham, England 1974. Even from a young age Steven enjoyed artistic pursuits like creating original artwork and music. However he lacked even a basic knowledge of food and cooking techniques until he was 21 years old. At this stage his passion for all things culinary was ignited as he began to train with chefs in restaurants first in England, then around Europe. Steven has since moved to the united states and began to explore the cuisine of the Americas. His mentor won his first Michelin star in 2012 he currently lives in Atlanta, GA with his wife. Steve Dolby has been cooking professionally in restaurants for 17 years.

Fuss-free Holiday/Christmas Dinner by Steven Dolby

(Serves 5-6 people)
Chestnut, Bacon & Spinach stuffing
200g Chestnuts (fresh or jarred roughly chopped)
100g Bacon (sliced)
1 Medium onion (roughly chopped)
2 Garlic cloves (finely diced)
100g Button mushrooms (sliced)
1 Medium carrot (sliced)
1 Celery stalk (sliced)
3 Sprigs fresh thyme (just the leaves)
110g Fresh spinach
210g Sourdough bread (cut into small cubes)
1 Egg
1 1/2 Cups chicken stock
Olive oil
Salt & ground black pepper (to taste)
Cover with foil



Turkey
3Ib Turkey breast 
3 Garlic cloves (cut into strips)
3 Sprigs fresh rosemary
Olive oil
Salt & ground black pepper
Internal temperature should reach 165f

Roasted vegetables
210g Parsnips
260g Brussels sprouts
300g Turnip (cut into bite size pieces)
3 Garlic cloves (with skins)
700g Potatoes (roast potato cut)
1 Large onion (cut in half)
Salt & ground black pepper
Olive oil

Turkey Gravy
1 Roasted onion (roughly chopped)
3 Tsp plain flour
3 Cups vegetable stock
2-3 Sprigs fresh roasmary
Salt & ground black pepper (to taste)
Reduce gravy by half

Christmas Quiche recipes by Steven Dolby

 Mini Turkey Spinach Pistachio Quiche

(Serves about 20 mini quiches)
INGREDIENTS
SHORTCRUST PASTRY
325g Plain flour
1 1/2 Tsp salt
165g Unsalted butter
90ml Cold water
OTHER INGREDIENTS
1/2 Medium white onion (finely diced)
1 Garlic clove (finely diced)
90g Leftover turkey (cut small)
40g Pistachio nuts (cut small)
1/2 Tsp fresh rosemary (finely chopped)
180g Fresh spinach
2 Eggs (organic cage free)
1 Egg yolk
1/2 Cup half &half
Olive oil
Salt & ground black pepper
Mature white cheddar (grated)
 Mini Smoked Salmon, Dill and chive Quiche

(Serves about 20 mini quiches)
INGREDIENTS 
1/2 Medium onion (finely diced)
2 Eggs (organic cage free)
1 Egg yolk
1/2 Cup half &half
15g Fresh chives (finely sliced)
5g Fresh dill (roughly chopped)
100g Smoked salmon (good quality, roughly chopped)
Smoked gruyere (grated)
Salt & ground black pepper
Olive oil
OTHER ITEMS
Muffin liners
Dried beans
Muffin tins
Cooking spray
