Pan fried white fish with lemon butter caper sauce by Steven Dolby

(Serves 2 people)

Two 7oz White fish fillets
3 Tbsp unsalted butter
8-9 Black olives
2 Cloves garlic
1 Medium red onion
Fresh Italian flat leaf parsley
Fresh spinach (enough for 2 people)
1/2 Tsp fresh lemon zest
1/2 Freshly squeezed lemon juice
1 1/2 Tsp small capers
Salt (Maldon sea salt to taste)
Ground black pepper (to taste)
Olive oil
